RECIPE

Mediterranean Pepper Salad

  • 2 green peppers
  • 2 red peppers
  • 2 yellow peppers
  • 1 tablespoon olive oil
  • 1 small onion
  • 2 garlic cloves
  • pepper to taste
  • 2 tomatoes
  • 10 olives
  • coriander q.b.

Preparation Method:

  • Start by grilling the peppers until the skin turns black.
  • Place them in a bowl and immediately cover them with cling film.
  • Let them stay in this “greenhouse effect” for 10 minutes. Meanwhile, in a frying pan, heat the oil and place the onion and the minced garlic cloves. When they are translucent, add pepper and add the tomatoes, cut into cubes, and leave to cook over low heat. simmer for 5 minutes.
  • In the meantime, remove the skin from the peppers (resist the temptation to put under water). Cut the peppers into slices, add the tomatoes and the mixture.
  • Arrange on a plate and decorate with olives and coriander.
